Orange and Lemon or Mint Creams
These would make a nice present for anyone- use them to fill a little box you have decorated yourself.
You will need-
Orange and Lemon Creams-
1 orange, washed
1 lemon, washed
225g or 8oz icing sugar, sieved as it can go lumpy.
4 teaspoons glycerine (from the chemist, also used in SNOWSTORM)
Small pieces of lemon and orange fruits to decorate (little diamonds you can get from the supermarket in a pot, or something similar)

Very Clean hands
1. Choose oranges and lemons which are quite firm as they grate more easily. First of all dry the fruits well, then grate them, over separate dishes so you take off the outer bit of skin, just the coloured bit. This is called the zest and has a lot of the flavour in it. Mum may have a little tool called a zester which does the job better than a grater usually.
2. Now cut the fruits in half across the middle, and squeeze out the juice into another two dishes. Again, mum might have a squeezer to help out with this bit.
3. Using two larger bowls, divide the icing sugar equally between them.
4. Now add the lemon rind, two teaspoon of the lemon juice and 2 teaspoons of glycerine to the first bowl. Mix well, then knead, using a little icing sugar, until the mixture is really smooth and doesn't have any cracks. Kneading is just pressing together-you can do it!
5. Do the same with the orange, using the same amounts as above.
6. Roll into little balls, press flat and top with a fruit diamond-press it down a bit.
Mint Creams
350g or 12 oz icing sugar, sieved well
6 teaspoons glycerine (see recipe for orange and lemon creams)
2 teaspoons water
Half a teaspoon peppermint essence
Pink and green food colouring (not essential, or just use one colour)
Clean hands (especially if you're making white ones)
A mixing bowl
1 Put the sieved icing sugar into the bowl, and add the glycerine and water and peppermint essence and mix well until you have a stiff paste. If necessary, add a tiny drop more water- take care not to add too much. Knead until it is fairly smooth.
2. If making two or three different coloured (pink, white and green) divide into three, make a hole in the top with your finger, and add just a tiny drop of food colouring- a little goes a very long way and you don't want to make the mixture too soft.
3. Knead one colour at a time until really smooth, using a little icing sugar on your fingers. Stamp out into shapes or roll into balls and flatten.
4. Decorate if you want to with hundreds and thousands or chocolate chips.
